Cherry coffee is the result of a complex and creative processing method, starting with a 24-hour pre-fermentation in plastic bags, followed by another 24 hours in cherry aerobically, enhancing its unique flavor. But the story doesn't end there. After depulping, the beans are fermented with fruits that have been dried and ground naturally, intensifying the concentration of rich flavors that will captivate your senses. These beans undergo 5 days of anaerobic fermentation, creating a rich and complex flavor profile. They are then mechanically dried for 10 days, with a 5-day stall to enhance flavor retention, giving the coffee a full-bodied texture and deep color. Cherry coffee stands out with its unique flavors, blending rich brown sugar, distinctive cocoa, and crunchy nuts, making each sip an exceptional experience.

This is a beautiful natural processed coffee that our coffee partners in Tolima have produced. These associations are composed of approximately 175 coffee-farming families. Since 2019 we have provided technical assistance to farmers on natural processing and most of the growers we work with now process at least a 80% of their coffee as natural. Tolima department is characterized by its high mountains, fresh weather, and volcanic soil, making it perfect for cultivating exceptional coffee. The Tolima region is one of the most productive coffee-growing areas and has always been represented in the Cup of Excellence, organized by the Colombian Coffee Federation.
