He believed in sustainable practices and processed his coffee naturally, drying the beans under the sun without the use of machines or water, which imparts an exceptional and unique taste to the coffee. The "El Laurel" farm, established by Mercedes, is named after his grandfather, who believed that trees symbolize life.
