This coffee undergoes a creative and highly controlled processing method. The cherries are first fermented for 24 hours in plastic bags, followed by an additional 24 hours of aerobic fermentation in whole cherry form, enhancing the coffee’s unique flavor profile. The process continues after depulping, where the coffee is fermented with naturally dried and ground cherries, intensifying its rich and complex characteristics. The coffee then undergoes five days of anaerobic fermentation, developing remarkable depth and complexity. Finally, it is mechanically dried for 10 days, with a five-day resting period during the drying process to further preserve and enhance flavor retention, resulting in a coffee with a rich body and profound character.
