Cherry coffee is the result of a complex and creative processing method, starting with a 24-hour pre-fermentation in plastic bags, followed by another 24 hours in cherry aerobically, enhancing its unique flavor. But the story doesn't end there. After depulping, the beans are fermented with fruits that have been dried and ground naturally, intensifying the concentration of rich flavors that will captivate your senses. These beans undergo 5 days of anaerobic fermentation, creating a rich and complex flavor profile. They are then mechanically dried for 10 days, with a 5-day stall to enhance flavor retention, giving the coffee a full-bodied texture and deep color.
