This coffee is harvested according to strict ripeness criteria, where the cherries are floated and hand-sorted to remove any defects. The cherries are then subjected to underwater fermentation for 30 hours before the pulp is removed. The covered beans are gently washed and then dried under controlled temperature conditions until the ideal moisture level is achieved.
