The process begins by harvesting 100% ripe coffee cherries on the farm, ensuring they are picked at the ideal maturity level for specialty coffee processing. Once the truck carrying the cherries arrives at the wet mill at Batalillo, the cherries are transferred via a conveyor belt into a tank to remove floating beans and any other impurities. After the cleaning process, the beans are placed in tanks for 48 hours. They are then moved to African beds to begin drying. The beans are manually turned every 30 minutes to ensure even drying, a process that takes about 15 days. Finally, the beans are stored in GrainPro bags to rest for at least one month.
